World’s Greatest Sous Chef
Each underground dinner menu is a nine-course dining experience served omakase-style, which means details are left up to the chef. What this really means is that we spend days poring over menus so that you don’t have to.
From start to finish, the FAM experience is a family affair—we do the cooking, bartending, hosting, and serving. From the moment you arrive we want that connection to be something you sense, so that by the time you leave, you also feel like family.
Our priority is our local growing and cooking community. Whenever it’s even remotely possible, we use ingredients sourced in our region. This commitment has introduced us to new foods and farmers across Texas, and we believe you’ll also taste the difference it makes.
Every meal starts with a complementary signature cocktail. From there, our meals are BYOB, with most people bringing either wines or spirits. If you have questions about pairings please reach out to us in the weeks before your meal and we will happily discuss recommendations.
Every weekend we see a wholly unique environment created as strangers gather around the table to eat, talk, and share about life with each other. It’s out of the ordinary to have the opportunity to meet with new people in this way, that’s what makes it so extraordinary.
Our courses are broken up into three sections of three, with small breaks between each section. Each dish is served with brief history of the dish, inspiration for its placement in the menu, and explanation of ingredients used. After the meal, if you would like to stick around and have a drink with Chef Brad and the best Sous Chef in the world, Paula Ann, that is always a much-loved part of the evening.

Meeting Chef Brad Green for the first time is more like visiting with your childhood best friend. When he talks to you, you feel like you are the only person in the room. That amount of attention and hospitality is real. It’s authentic and its how every person is treated when you walk in the door.
